Just to add: My Windows 11 installation of Jellyfin V10.10.7 was working great. I updated to V10.11.0, then had various problems, so I reverted to V10.10.7 and restored the backup data. I later updated to V10.11.2, but again had issues. I then tried a full wipe and clean installed V10.11.02. After that, I also experience that Jellyfin removes the unwatched episode from next up if I delete the previous episode.

PS: My quick and dirty temporary work-around is to add a 5-second video of any dubious content and quality to each Series that I am currently watching (The same video to each Series). Just rename this short video as "S01E01" and paste it into each series' folder. Make sure that S01E01 is marked as WATCHED. Problem disguised!! Now I can continue to delete watched episodes from my system as necessary, without running out of disk space. Unfortunately, this work-around does not push the next episode up on the "next up" list once the previous episode is watched. At least it does not totally disappear from the list.
